FIREWEED JELLY RECIPE
8 cups fireweed blossoms (no stems)
1/4 cup lemon juice
4 1/2 cups water
2 packages Sure-Jell (or powdered pectin)
5 cups sugar
Add lemon juice and water to fireweed
blossoms (flower part only!).
Boil 10 minutes and strain.
Heat the strained juice to lukewarm.
Add Sure-Jell (or pectin) and bring to boil.
Add sugar and bring to boil for 1 minute.
Pour into hot clean jars and seal. Process
in boiling water bath for 10 minutes.
